Pinspiration: Week of March 11th 2010

Bored with the recipes currently in your healthy eating plan? Here are some new ideas from our Pinterest boards including a budget friendly dinner, a healthy grab-and-go breakfast and a delicious chocolate treat packed with protein.

This vegetarian chili gets it’s unique flavour from sweet potatoes and cumin, and was a huge hit with my family. I made it in the slow cooker, so it was quick and easy to prepare. It’s also quite economical, with protein coming from kidney and black beans. Definitely give this recipe a try!

These healthy breakfast muffins are full of nutrition to help get you through your day. The recipe calls for a whole fresh banana and apple, plus dried fruit, nuts and seeds of your choice. I made them with raw sunflower seeds, cranberries, walnuts and coconut, and made them gluten free by using coconut flour. These make a great breakfast on the go for busy adults, or a yummy nutritionally dense snack for the kids. And they are amazingly delicious! We’ll definitely be making another batch this week.

These little chocolate gluten free cookies are a sinfully delicious treat that won’t break the calorie bank. I make three dozen little cookies with this recipe and use coconut flour (add a bit of water to the mix to compensate) for added protein. A serving of two cookies has only 188 calories and over 11 grams of protein. They freeze well too!
